No Real Recipe Vegetarian Tortellini Soup

It rained, briefly, almost imperceptibly, because Hurricane Hilary “hit” the West Coast of California. The sky has been gray & breezy all day, humid, but from where I sat with a fan blowing (no AC), it almost looked like fall.

So I made soup.

This is a good clean-out-the-fridge non-recipe. Throw in all the veg, use whatever pasta, & give it a good go on the seasoning. It’ll be delish any which way.

Here’s what I did:

1 small yellow onion
2 small carrots
3 celery stalks
Garlic
Seasoning – Italian herbs, onion powder, oregano, thyme, pepper (I omit salt due to the sodium in the veg broth)
1 14.5oz can diced tomatoes, undrained
7c veg broth
1 15.5oz can white beans, drained & rinsed
2 handfuls fresh spinach
1 handful fresh basil leaves
16oz pkg cheese tortellini
Red wine or vinegar (optional)

Rough chop the onion, carrots, & celery. Saute in olive oil for 3 minutes, then add garlic & cook for 2-3 minutes more. Add seasoning & tomatoes & stir; add broth, then beans. Simmer 10+ minutes or whatever kinda time you’ve got. Chop spinach & basil together. Add tortellini & spinach/basil; simmer for 3-5 minutes. Add wine (1/4-1/2c) or vinegar (a splash) if using & adjust seasoning to taste. Enjoy!
